Hot Bacon and Cheese Bowl

1 (1 pound) loaf unsliced round Italian
bread
2 cups shredded Monterey Jack cheese
1 cup shredded Parmesan cheese
1 cup mayonnaise*
1/4 cup chopped onion
5 bacon strips, cooked and crumbled
1 garlic clove, minced
DIRECTIONS:
1.Cut top fourth off loaf of bread; carefully hollow out bottom, leaving a 1-in. shell. Cube removed bread and set aside. Combine the remaining ingredients; spoon into bread bowl. Replace top. Place on an ungreased baking sheet. Bake at 350 degrees F for 1 hour or until heated through. Serve with reserved bread cubes.

Brownies

2 Sticks margarine
1/3 c cocoa
2 C sugar
1 t vanilla
4 eggs
1 1/2 C flour

Combine all ingredients and bake at 350 degrees for 4o minutes.

Lemon Marjoram Green Beans

12 oz green beans
3 T butter
1 t marjoram
1/4 t salt
1 t lemon zest

1. steam green beans
2. melt butter and combine with remaining ingredients
3. Pour over green beans and stir to coat.

Candied Yams

2-3 large Yams
1/2 to 3/4 bottle Karo syrup
1 to 1 1/2 C brown sugar
cinnamon to taste
1 cube butter

1. Bring yams to boil in a large pot and cook until soft, but not crumbly
2. Let yams cool and peel.
3. Slice yams into 13 x 9 baking dish
4. Combine syrup and brown sugar and pour over yams
5. Sprinkle cinnamon over yams
6. Bake at 350 degrees for 15-20 minutes until syrup boils
7. Reduce heat to 300 degrees and bake 45 minutes, basting or flipping the yams every 10-15 mintues.

Autumn Soup

1 1/2 to 2 lbs ground beef
1 C chopped onion
3 C water
1 can undiluted consomme soup
1 C sliced carrots
1 C diced celery
1 C cubed potatoes
1 1/2 t salt
1 t pepper
1 bay leaf
1/8 t basil
1 quart whole tomatoes (put in blender or omit)

1. In a large saucepan or dutch oven, brown ground beef with chopped onion. Drain fat.
2. Combine remaining ingredients, heat until boiling, simmer until tender.

Chocolate Chip Cookies

2 1/4 C flour
1 t baking soda
1 C softened butter
3/4 C brown sugar
1/4 C white sugar
1 3 oz package vanilla instant pudding mix
1 t vanilla
2 eggs
1/2 package Ghiardelli milk chocolate chips

1. Mix flour and baking soda in a bowl. Set aside.
2. Combine remaining ingredients except chocolate chips in a mixer.
3. Gradually add flour mixture.
4. Stir in chocolate chips.
5. Bake at 375 degrees for 8-10 minutes.

Rich Red Spareribs

4 lbs meaty spareribs (boneless country style pork spareribs)
1/4 C of each: soy sauce, honey, lemon juice
1/2 C ketchup
1/2 t ground ginger
1 clove garlic, minced and pressed

1. Place spareribs in a large pan.
2. Add water to cover, bring to a boil, reduce heat, simmer 30 minutes.
3. Drain well, patting ribs dry with paper towel.
4. Arrange in a broad 3-4 quart casserole dish.
5. Mix soy sauce, honey, lemon juice, ketchup, ginger and garlic until smooth. Double sauce if desired to pour over rice, etc.
6. Pour over ribs, cover & bake, bastingd 2-3 times with sauce for 1- 1 1/2 hours at 350 degrees.

Peach German Pancakes

5 T butter
4-6 eggs, beaten
1 C flour
1 C milk
1/2 t salt
4 T sugar
1 15 oz can peaches (cut bite size)
1/2 t cinnamon
1/2 - 1 C pecans (optional)

1. Preheat oven to 425
2. Melt butter in a 9 x 13 baking dish.
3. Combine eggs, flour, milk, salt and sugar in blender.
4. Mix well and pour into baking dish. (I blend eggs first for a long time, then add the rest)
5. Sprinkles peaches, cinnamon and nuts evenly over batter.
6. Bake at 425 degrees for 16-18 mins

Cream Sauce

1/2 c sour cream
4 T powdered sugar
6 T peach syrup
1/4 t vanilla

1. Combine all ingredients and use as syrup for pancakes.

Cheesy Potato Soup

3 C chicken broth
1 C chopped celery
1/2 C chopped onion
5 C diced potatoes
1 t salt
dash pepper
3/4 C butter
3/4 C flour
1 Quart 1/2 and 1/2

1. Bring first 6 ingredients to a boil and simmer in a large pot until tender.
2. Meanwhile, make a roux out of butter and flour
3. Add quart of 1/2 and 1/2 and heat, stirring constantly, until thick.
4. Stir cream into veggies
5. Add 3-4 oz of cheese whiz or 4-8 oz of shredded cheddar

If desired, add chopped ham and corn for chowder.

Banana Bread

2 C sugar
3/4 C butter softened
2 eggs (if small, use 3)
1/2 C sour cream
1 t baking soda
3-4 mashed bananas
3/4 C nuts (pecans or walnuts)
2 C flour
1/4 t salt

1. Cream butter and sugar
2. Combine eggs to butter and sugar mixture
3. Combine remaining ingredients
4. Bake two loaves at 350 degrees for 45-50 minutes. Or bake muffins at 425 degrees for 17-23 minutes.
